Yummy Tailgating with Frito Lay! {Giveaway}

frito-lay-logoFrito Lay can make game day extra fun by providing you and your guests with the necessary sustenance to root for your team. My house usually has plenty of hoots and hollers and we all need a little pick me at half time! While you might not think of extra healthy eating when you think of Frito Lay, you can usually find ways to trim down the fat and calories by substituting healthier ingredients.

I decided to go with a true favorite of my entire family and make my mom’s taco dip. It is fast,  easy, oh so yummy and came in very handy for the Monday night showdown this week between the Minnesota Vikings (my team!) and the Green Bay Packers! The victory may have been sweet but the treats were salty.

Taco Dip

8 oz cream cheese, softened

8 oz sour cream

1 packet of Taco Seasoning

1/2 cup salsa

2 cups shredded cheese

1 medium tomato, chopped

1 cup chopped lettuce

green onion (optional)

black olives (optional)

Mix the sour cream and seasoning together, then add softened cream cheese and mix until creamy.  Layer ingredients with cream cheese mixture on bottom, then salsa, lettuce, tomato, green onion and olives (if desired) and top with cheese. Chill for one hour or more. Serve with Tostitos Tortilla Chips and/or Fritos Corn Chips.

  • Fat Free or Lite Sour Cream
  • Lite Cream Cheese
  • Fat Free Shredded Cheese

Feel free to change the topping amounts to suit your tastes. I don’t really measure but just eyeball it!

    We love making a dip as follows and we use the original frito chips to dip.
    In a 9″ pie plate, layer in this order.
    8 oz softened cream cheese spread on bottom of dish,
    top with 1 can refried beads,
    top with 1 jar mild salsa and
    top with 1-8oz bag of shredded cheddar cheese.
    Right before serving, microwave for 5 minutes, until cheese ontop is melted.
    This dip is always a hit. thanks.

    I like to make a Fiesta Party Dip using 1-2 Tablespoons Fiesta Party Dip Mix (by Tastefully Simple), 1/4 cup mayonnaise and 3/4 cup sour cream. (I’ve made a healthier version using low fat sour cream and mayonnaise.) Then I like to serve it with LAY’S Wavy Original Potato Chips. I’m sure it would be good with Baked Lays too! :-)

    Chilli and Cheese on Fritos scoops baked in the oven. Essentially they are corn chip nachos. Healthier? I put shredded lettuce and tomato slices on top. Whaddaya want from healthy? I am a guy!

    A fave with hubby is to take your favorite salsa and pour it over a block of cream cheese. Dig in with the Fritos. I use no fat cream cheese and baked Tostitos.

    This is one of my mother’s recipes…..

    Take a brick of cream cheese (to lighten the recipe I use 1/3rd less fat cream cheese)

    Then take cocktail sauce and small frozen shrimp (thawed) and mix them with a spritz of fresh lemon juice.

    Pour the shrimp cocktail on top of the brick of cream cheese and serve with Fritoes or Tostitoes

    I make this healthier by using low-fat cheese and serving with salsa, which is always lo-cal.

    3 cups Fritos corn chips
    3/4 cup chopped onion
    1 cup grated cheddar cheese
    2-1/2 cups chili (your favorite — homemade, canned, whatever)
    Preheat oven to 350°F.

    Spread 2 cups of Fritos in a baking dish. Sprinkle half the onion and half the cheese over the Fritos. Pour the chili over the onion and cheese. Sprinkle the remaining Fritos, onion and cheese over the chili.

    Bake for 15 or 20 minutes and cheese is bubbly. Serve hot

    1 pound lean hamburger , browned
    1 10 ounce can tomatoes with green chilies
    microwave the cheese and tomatoes. Add browned hamburger and serve with Tostitos Scoops.

    Healthy Sombrero Dip

    1 Bag Morningstar Farms Ground Beef Substitute
    1 Can Fat Free Vegetarian Re fried Beans
    2 Hatch Chili Peppers, diced and sauteed in veggie broth or olive oil
    1 yellow onion
    2 cups vegan cheese – monterry jack
    Baked tortilla chips

    Preheat oven to 350. Saute diced peppers and onion until onions are translucent . In a large pan, heat up Ground Beef Subsitute. Add can of refried beans, incorporate peppers and onions until mixture is uniform and warm throughout. Put mixture into a casserole dish, top with vegan cheese. Bake in oven for 20 minutes or until cheese is melted. Dip in your tortilla chips and enjoy!

    Grandma L’s hot cheese dip and fritos
    1 block reduced fat cream cheese
    8 oz reduced cheddar cheese (white) shredded
    3 cloves garlic pressed
    1 TBS butter.

    heat in micro 2 minutes at a time then stir keep melting and stirring until bubbly and hot serve hot with fritos or scoops (you could use fat free cram cheese and baked fritos) its so yummy

    main entry: I love mexican dishes & chicken so I make a Mexican Chicken Dish but use Frito’s Corn Chips in the dish instead of nachos which is really good. And I make it healthier by using fat free cream cheese/ sour cream and cheddar cheese if desired. I use the smaller frito corn chips instead of nacho chips. And its really good.

    Chicken Corn Chips Supreme

    Ingredients
    4 Boneless Skinless Chicken Breasts
    I packet of Taco Seasoning
    1/2 block of Fat Free Cream Cheese
    2 cups of 2% Cheddar Cheese (or Fat Free)
    Fat Free Sour Cream
    Shredded Lettuce
    Salsa
    Regular size Fritos corn chips
    Cooking Spray

    *Directions
    Place chicken & taco seasoning in a ziploc bag & it Marinate overnight.

    Cook chicken in casserole dish on 350 for 25 minutes. (Spray dish with cooking spray prior to baking).

    After 25 minutes of baking… cover chicken in salsa and cheese…then back until cheese is melted.

    Mexican Dip:
    1 cup of salsa
    1/2 block of fat free cream cheese
    3/4 a cup of shredded cheddar cheese
    (Heat in Microwave until melted).

    Once Chicken and Mexican Dip is cooked, Make your very own Chicken Taco Salad Supreme! Use frito lays corn chips, lettuce, dip, salsa, chicken, and a dollop of fat free sour cream.

    I have an open-face “taco bar” and use Tostitos Scoops instead of taco shells. I drain and rinse my meat before adding the taco seasonings; use low fat or fat free sour cream; low fat cheese; and make sure there are lots of fresh veggie and bean options for toppings! You could also use ground turkey (or 1/2 and 1/2 ground beef) for your taco mix.

    1- 16oz. Jar of Salsa (we use medium)

    I spread 8 ounces of cream cheese on the bottom of a pie dish, then 15 ounces of Hormel no-bean chili spread on top (I prefer half the amount), and topped with shredded cheese (preferably Mexican). Then bake at 350 degrees until cheese is bubbling but not browned. Use to dip Tostitos in.

    Healthy Veggie Salsa
    1 can sweet yellow corn, drained
    1 can black beans, drained
    1 can tomatoes (any style), drained
    2 avocados, diced

    I make a party mix with soy sauce, hot sauce, worcestershire sauce, salt, pepper, garlic salt, butter, chow mein noodles, pretzels, rice chex cereal, peanuts, almonds and Frito Lay corn chips. I mix the liquid ingredients and spices with about 1/2 stick of butter, pour over dry ingredients and bake at 200 for about an hour- yum yum! It is a pretty low fat dish and you could probably (although I haven’t tried it) use non stick cooking spray in place of the butter.

    2 lb of ground turkey
    2 packet of Taco Bell Taco Seasoning
    1 16oz bag of finely shredded sharp cheese
    1 bag of Frito Lay Scoops.
    Preheat oven to 350
    Brown turkey meat in skillet, add the Taco Bell seasoning packet follow directions on packet. Take a cookie sheet put the Frito Scoops on the sheet in rows. Put a teaspoon of the prepared taco meat in each scoops, sprinkle the top with the shredded cheese put into preheated oven for about 10-15 minutes until the cheese is melted. For addional toppings you can use sour cream or salsa.
    WARNING: THESE ARE VERY ADDICTIVE : )

    One of my favorite tailgating recipes is Texas Caviar. It’s so quick and easy, since it’s no-cook and made up of mostly prepared ingredients. You can always use fresh instead of canned, but good-quality, organic canned ingredients are just as good!

    1 can (15 oz) black beans, drained
    1 can (15 oz) black-eyed peas, drained
    1 can (15 oz) pinto beans, drained
    1 can (15 oz) yellow or white corn, drained
    1 can (4 oz) green chilies, drained
    1 jalapeno, seeded and finely chopped
    1 green pepper, seeded and finely chopped
    1 red onion, finely chopped
    2 cloves garlic, minced
    1/3 cup chopped fresh cilantro
    1/3 cup good olive oil
    1/3 cup vinegar of preference (I use rice vinegar)
    2 tablespoons white sugar (or more, depending on sweetness of vinegar)

    Mix the beans, corn, chilies, peppers, onion, garlic, and cilantro together in a large bowl. Whisk olive oil, vinegar, and sugar together in a separate bowl. Pour oil and vinegar mixture over other ingredients and toss. Cover and refrigerate at least 2 hours, over night is best. Make sure you serve with Fritos or Tostitos Scoops, it’s a chunky dip!

    1- Campbell’s Fiesta Cheese Soup

    Brown meat, drain. Add taco seasoning.. follow directions on envelope. Then add refried beans and fiesta cheese soup! Can also top with shredded cheese, tomatoes, lettuce if desired! So quick, easy and yummy!

    You can use low-fat sour cream and cheese to make it healthier. The beans I use are fat free so that’s great!

    It can be made ahead of time and reheated just in time for kick-off.

    Ingredients:
    I pkg. frozen spinach (thaw and drain before using)
    1 small yellow onion, diced
    1 can Rotel tomatoes, drained
    1 8 oz. pkg. cream cheese
    2 cups shredded monterrey jack (mozzerella also works well)
    Splash of milk
    Garlic salt, salt, and black pepper to taste

    Preheat oven to 350 degrees. Place the first five ingredients in a baking dish, with the spinach on the bottom. Cover. Bake for 10 minutes.

    Remove from oven, stir to combine ingredients and distribute cream cheese. Add splash of milk, garlic, salt, and pepper and stir until well blended. Bake for an additional 15 minutes uncovered.

    Serve warm with tostito scoops!

    You can make it healthier by using the whole wheat scoops or using low fat cheese : )

    1 eight ounce package fat free cream cheese
    1 half cup fat free sour cream

    1 (12-ounce) can evaporated milk
    1 cup (8 ounces) enchilada sauce

    FRITO MEXICAN SALAD

    It is better to add Frito’s and Catalina Dressing just before serving- Keeps Frito’s Crunchy.

    *

    1 lbs Cooked and Ground Turkey Meat 1 Head Lettuce (Shredded)
    *

    2 Tomatoes Diced
    *

    ½ C Red Onion
    *

    1 Can Ranch Style or Red Kidney Beans (Washed and Drained)
    *

    3 C Shredded Cheese
    *

    ¾ Bottle Catalina Dressing
    *

    1 Pack Frito’s

    *

    In a large bowl add Cooked turkey meat and chill till Luke warm. Add Shredded Lettuce, diced tomato, Onion, beans and cheese. About 10 minutes before serving add ¾ Bottle Catalina dressing and slowly add 1 pack of Frito’s.

    I make this recipe healthy by using ground turkey instead of ground beef.

    Chicken Nacho Dip
    1 (14 ounce) can diced tomatoes with green chile peppers drained
    1 (1 pound) loaf processed cheese food (such as Velveeta®), cubed
    2 large cooked skinless, boneless chicken breast halves, shredded
    1/3 cup sour cream
    1/4 cup diced green onion
    1 1/2 tablespoons taco seasoning mix
    2 tablespoons minced jalapeno pepper, or to taste (optional)
    1 cup black beans, rinsed and drained

    Place the diced tomatoes, processed cheese, chicken meat, sour cream, green onion, taco seasoning, and jalapeno pepper into a slow cooker. Cook on High, stirring occasionally until the cheese has melted and the dip is hot, 1 to 2 hours. Stir in the black beans, and cook 15 more minutes to reheat

    To Make it healthy:)
    Use fat free cheese
    low fat sour cream
    low salt tomatoes

    I mix together equal parts sour cream and cream cheese in a large casserole dish. Then I layer the following toppings:
    Diced onions, diced melrose peppers, diced tomatoes, monteray jack cheese, cheddar cheese, sliced black olives and diced green onions.
    Serve with Frito Lay Chips for a taste everyone will enjoy :)
