Applesauce Raisin Muffins Recipe from KitchenAid {Spring Brunch Series}

A fresh homemade muffin is such a welcome addition to my morning coffee. They go fabulous with eggs and other breakfast foods. This applesauce muffin from the KitchenAid Recipe Collectioncookbook is a healthier and hearty muffin option. Loaded with applesauce, raisins and nuts this muffin has only two tablespoons of butter for fat. Keep in mind however that this will make the muffins a bit stickier as is normal when applesauce replaces the majority of fat in a recipe.

Ingredients

(12 muffins)

1 cup all-purpose flour

3/4 teaspoons baking soda

1 cup sugar

2 tablespoons unsalted butter-room temperature

1 egg

1 cup applesauce

1 cup raisins

1 cup chopped walnuts

Directions

Combine flour, baking soda and sugar then add butter and egg. Cream with your electric mixer until light and fluffy.

And in applesauce, raisins and nuts and stir. Since my son Lucian isn’t a big fan of nuts, I substituted 1/2 cup of the chopped walnuts with golden raisins. This made the muffins chock full of raisins and flavorful. Next time I think I might try dried cranberries or even chocolate chips if I’m feeling daring!

Coat 12 cup muffin pan with nonstick cooking spray or line with baking cups. Evenly divide batter among cups.

Bake in preheated oven at 350 degrees. Bake 18 to 22 minutes or until golden brown and toothpick inserted in enter comes out clean. Cool 5 minutes in pan before transferring to wire rack to cool completely. Store in airtight container.

    These look perfect for making with and for the kids and they’re a good way to make use of our apple sauce besides just having it for lunch. I like your idea to substitute half of the nuts with raisins.

    I made them, they are delish. However, in the directions you left out where to add the applesauce into the batter mixture. Am I the only one that noticed this? I added into step 1 with dry ingreds.
