Kraft Fresh Take Cheddar and Bacon Potato Chowder {Recipe + Giveaway} CLOSED

When I visited the  Kraft Foods BlogEats conference for bloggers last fall I got the chance to try out Kraft Fresh Take cheese and breading mixes before they even hit the market. There they showed both traditional and non traditional ideas for the mixes which got me thinking of new ways in which to use them.

Each package includes a separate cheese and breading compartment within a pouch which can easily be spread apart to create a single pouch. You can toss and coat your chicken, pork or fish directly in the package so clean up is so simple. But you can also use these mixes to create a wonderful meal that goes beyond coating meat. The Kraft website includes plenty of recipes to help you answer the question, “What AM I going to make for dinner?”

I recently spied the Kraft Fresh Takes Cheddar Jack & Bacon at my grocery store and wanted to create something unique and simple. I immediately thought of mixing it with ground beef to make some amazing hamburgers on the grill. Apparently I’m not the only one who has had this idea either as I found a recipe for something similar on Kraft. Then I thought of mixing it with cream cheese and baking it for a wonderful dip. While this might make a great appetizer, I was searching for a meal.

And with that thought and a search in my pantry, this Cheddar and Bacon Potato Chowder was born. Keep in mind this is a thicker chowder that borders on a stew but that certainly fills you up. I had never considered a breadcrumb mix as a soup thickener but it worked great!

Cheddar and Bacon Potato Chowder
Recipe Type: Main
Serves: 4-6
 

Ingredients
  • 1 tbsp. butter
  • ¼ cup chopped red or yellow onion
  • 1 can (14-1/2 oz.) chicken broth
  • 1 cup milk
  • ½ cup half and half
  • 1½ pounds red potatoes, baked, cut into cubes
  • ½ cup canned sweet corn
  • dash of pepper
  • Kraft Fresh Takes Cheddar Jack and Bacon
  • sour cream (for garnish)
  • Two green onions, sliced. (for garnish)

Instructions
  1. Melt butter in large saucepan or dutch oven over medium heat.
  2. Add onions and sautee until crisp-tender. Add chicken broth, milk, half and half, corn and potatoes. Bring just to boil, stirring constantly.
  3. Slightly crush potatoes with back of spoon. Simmer on medium-low heat 5 minutes, stirring frequently.
  4. Add Fresh Takes to soup, including both cheese and bacon bread crumbs. Cook until cheese is melted and chowder has thickened, stirring constantly.
  5. Serve, topping each bowl with sour cream and green onions.

    I’ve tried the Italian Parmesean and the Garlic and Rosemary, but I really want to try the Cheddar Jack and Bacon…it was out when I went to the store yesterday :( I also saw on the Kraft website that they have a Mesquite BBQ and a 4 Cheese, but I haven’t seen them at the store yet over here.
