Starting the Day Right with Canadian Bacon Breakfast Quesadillas #hormelfamily

Breakfast is a very important meal of the day. Besides helping us to fuel our bodies after a long fast during the night, breakfast also helps to kick start our metabolism. A good, hearty breakfast will keep us satisfied until lunch and keep us from snacking on healthy foods.

The first meal is really a favorite meal time in this house. Besides the fact that my kids just absolutely love all breakfast foods, it is also a time for us to wake up together and get our day started.  The weekend makes it all the better with more time to prepare a yummy breakfast. Bring on the monkey bread, pancakes, french toast, bacon and sausage! (Not all together of course!)

This morning I realized I was light on options for my family. But after a little digging around in my refrigerator and cupboards,  I found a hearty option that was different but easy to prepare.  I grabbed some eggs, tortillas, mushrooms and canadian bacon and set to work making these breakfast quesadillas for my family!

I quartered my Pizza Style Hormel Canadian Bacon slices and sauteed them with some mushrooms and butter. Other veggies would taste great as well including onions or green and red peppers but I was trying to work with what I had on hand. In a separate skillet I cooked up some scrambled eggs so I could custom build my quesadillas. (Unfortunately my boys don’t like mushrooms!)

I heated up a griddle and lightly buttered my flour tortillas, laying them butter side down. I then built my quesadillas with canadian bacon, mushrooms, eggs and finally freshly shredded cheddar and monterey jack cheeses on half of the tortilla. I folded the other side over and cooked until the tortilla was golden brown before flipping it over to continue cooking on the other side.

Once both sides were brown and the cheese melted, I transferred it over to a cutting board to quarter them. I served the breakfast quesadillas with sour cream and medium La Victoria Thick ‘n Chunky Salsa.

They were a huge hit and surprisingly very filling so I plan on making them again. These were a great reminder that by keeping some great products at my disposal, even when I’m light on groceries I can prepare a fabulous meal for my family and help them start the day off right!

    This sounds so good! Sometimes I cut it up and put it in eggs. It’s sort of like an omelette, but I let it cook right in it.

    They look and sound delicious to me. We have recently started making things like this for meals breakfast too. There are so many different things you can use in them. Alot of times we do this instead of making a sandwich with bread. Sometimes we eat them cold sometimes we make them hot. You will be surprised what leftovers you have that you can add one or two more things to them to make one everyone will like

    Boy, those look good. I am not very creative when it come to cooking. I like your filling. Mine are almost always just cheese.

    Those look scrumptious! I think breakfast quesadillas are the way to go during the school year for an easy on the go meal.
